Healthy Banana Nut Muffins
I truly enjoy cooking, and one of the easiest ways I have found to incorporate ingredients I have lying around the kitchen is to just google the ingredients in combination on a search and see what recipes come up! I have been loving these muffins I made over the weekend that I found on cookieandkate.com. I have had one muffin along with my shakeology every morning this week with some almond butter on it! I use recipes like this as a base for knowing all the types of ingredients needed, but I always end up substituting my own preferred ingredients instead! I swapped out:
- 1/2 a cup maple syrup or honey for 1/4 cup and then used some stevia to add the extra sweet flavour,
- regular milk for almond milk,
- 2 eggs for flax seed eggs (each egg is equivalent to 1 tbs of ground flax with 3 tbs of water- so in this case use 2 tbs ground flax and six tbs of water),
- regular flour for gluten free flour, and
- sugar for walnuts sprinkled on top!
- Note: If you are ambitious and are good at mixing protein substitutes such as protein powder into recipes, you could give that a try as well to up the protein content.
- This makes approximately 12 muffins.
